Pumpkin Muffins


It's almost fall y'all and that means it's time for pumpkin muffins.
Pumpkin anything really.:)
But this is my favorite. The recipe is from my SIL Emily. 
She makes the BEST PUMPKIN MUFFINS EVER!!!!!

What you'll need for the muffins:

Pillsbury Quick Bread- Pumpkin (plus the ingredients listed on the box)
2 blocks of cream cheese (softened)
1/3 cup sour cream
1 tbs milk
confectioners sugar 


Follow the recipe on the Pillsbury box, adding what it asks for.
Add to that batter, a half block of cream cheese and 1/3 cup sour cream.
Mix until everything is blended.
Cook according to box. About 15 minutes.

While those are making your house smell heavenly you can start on the cream cheese icing.

Mix your softened block of cream cheese with 1 tbs of milk, and add just a pinch of confectioners sugar to taste. You can add more depending on how sweet you want it.

Now you can either just frost your muffins or you can fill them.
Trust me filling is the way to go! ;)

I put my icing in a Ziploc bag and cut one of the bottom corner tips off. Place that tip in the center of the muffin and press down. Slowly squeeze the Ziploc filling the muffin. The muffins top will start to expand a bit which is totally fine. Just stop when the icing starts coming out of the center.

And last but not least, enjoy!

You may want to make 2 batches of these bad boys because you will eat 12 all by yourself and you will need to share the other batch with you hubby and kiddos! ;)
